These Peanut Sesame Noodles are one of my favorite winter recipe. Easy to make and delicious to taste.

Ingredients

  • 180g dry rice noodles or other noodles
  • ½ medium red onion, sliced into strips
  • ½ cup sliced bell peppers, sliced into strips*
  • 1/2 medium carrot, sliced into strips*
  • 2 tbsp sesame oil (highly recommend, but feel free to use other oil)
  • Chopped spring onions, for topping
    Sesame seeds, for topping
  • Sauce
    ¾ cup warm water
    2.5 tbsp peanut butter (I used slightly salted and sweetened peanut butter)
    3 cloves garlic, minced
    2 tbsp sesame oil (highly recommend, but feel free to use other oil)
    2 tbsp maple syrup or other liquid sweeteners, can be subbed with sugar
    4 tbsp soy sauce, or to taste
  • Cornstarch Slurry
    1/2 tbsp cornstarch + 1 tbsp room temperature water, mixed into a slurry

Directions

  • Pour boiling hot water over the noodles. Carefully break apart. Leave to sit for a few minutes until pliable and half-cooked. Drain the water afterward
  • Mix all sauce ingredients EXCEPT the cornstarch slurry in a bowl until smooth. Adjust flavors based on desired taste. Set aside
  • In a large pan, heat the 2 tbsp sesame oil or other oil. Sauté the onions, bell peppers, and other veggies.
  • Add in the veggies you’re using. Sauté until tender.
    Add in the noodles. Pour in the sauce while mixing the noodles.
  • Cook for another 3-5 minutes on medium to high heat. Pour in the cornstarch slurry and mix well until sauce has thickened and is absorbed by the noodles.
  • Turn off heat. Top with sesame seeds and spring onions, if using. Enjoy while hot!
    Veggies are really up to you! You can use what you have available!

How To Customize Your Peanut Sesame Noodles Recipe

  • ProteinChicken, steak, or shrimp is always a great choice to have
  • Vegetables: Add in all your favorite raw vegetables that you love. Slice vegetables evenly to cook quickly. Carrots, snow peas, celery, or bell peppers are great vegetables to try.
  • Gluten-Free: If you are gluten intolerant I have heard that Tamari is a great substitute for soy sauce and linguine. You can also use zucchini spirals or cauliflower rice for more choices.
  • Peanut Free: This is a great way to add in your favorite nut butter. Stick with creamy and smooth nut butter for best results and leaving this nut-free for those allergic or who prefer not to have the peanut taste.
  • Spicy: You can never go wrong with a little spice. Heat just enhances and turns up a recipe to the next level. Red pepper flakes, cayenne pepper, or paprika are also great seasonings for a little extra spice.

Peanut Sesame Noodles With Chicken

For The Noodles and Chicken:

  • 1packet noodles
  • 1/2 teaspoon salt (for the cooking water)
  • 3 cups shredded cooked chicken

For The Sauce

  • 1 tablespoon plus 1 teaspoon minced garlic (5 medium cloves)
  • 1 tablespoon plus 1 teaspoon minced ginger root (from a 2 inch by 1 inch piece)
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 3/4 cup crunchy peanut butter
  • 1/2 cup soy sauce
  • 6 tablespoons warm water,  or more if needed
  • 1–2 teaspoons chili-garlic sauce or the hot sauce of your choice
  • 4 tablespoons plus 1/4 teaspoon sesame oil
  • Mix-Ins:
  • 2 carrots, shaved into ribbons with a peeler
  • 6 scallions, sliced thinly crosswise
  • Toppings:
  • 1/2 of an English cucumber cut into matchsticks
  • 1/4 cup sesame seeds, toasted (Toss and stir in a dry skillet over medium heat until fragrant and lightly toasted, watching carefully to prevent burning. Remove from heat immediately)

Directions For Peanut Sesame Noodles With Chicken

  1. Cook The Noodles: Bring a large pot of salted (1 teaspoon or so) water to a boil. Cook pasta al dente (until just tender, with some bite) Drain and cool under running water. Drain thoroughly and transfer to a large mixing bowl and toss with 1/4 teaspoon sesame oil to prevent sticking.
  2. Make The Sesame Peanut Sauce: Combine garlic, ginger, vinegar, honey (or sugar), peanut butter, water, soy sauce, and chili-garlic sauce in a blender or food processor. Process for a minute or so until fully combined.  Some peanut butter is thicker than others.
  3. Add 2 tablespoons of sesame oil and blend thoroughly. Repeat with the remaining 2 tablespoons of sesame oil. If the sauce is too thick, add more warm water, a tablespoon at a time, until you get the desired consistency.
  4. Finish The Dish: Add the chicken, carrots, and 3/4 of the scallions to the bowl with the noodles. Pour the sauce over and toss gently to combine. Transfer noodles to a serving bowl or to individual bowls. Garnish with cucumber, scallions, and sesame seeds. Serve at room temperature.
