- 1 medium onion chopped
- 1 lb chicken breast cut into bite-sized pieces
- 1/4 tsp salt or to taste
- 1/4 tsp pepper or to taste
- 3 cloves garlic minced
- 10 oz penne uncooked (2 1/2 cups)
- 2 1/2 cups chicken broth
- 1 cup milk
- 8 oz spinach fresh (about 3 cups)
- 3 oz Cream Cheese
- 1 cup mozzarella cheese shredded
- 1/2 cup Parmesan cheese freshly grated

- Heat the olive oil in a large skillet over medium heat. Add the onion and cook till translucent.
- Add the chicken and season with salt and pepper and cook through until browned. Stir in the garlic and cook till aromatic for about 1 minute
