Directions for Oyster Sauce Recipe for Stir Fry

  • Coat the chicken in the oyster sauce, sweet soya sauce, dark soy sauce and sesame oil and set aside for 10 minutes. Heat a wok over high heat and add the vegetable oil. Add the garlic and coriander (stalks and roots) and stir-fry for about 1 minute until fragrant, add the chicken and stir-fry until the chicken is lightly browned.
  • Add the mushrooms, onion and carrot and toss for a minute or two until the vegetables are softened, then add the chilli and spring onion and toss together. Add a little water if the mixture looks too dry, then thicken with as much of the cornflour mixture as is necessary to give the sauce a silky consistency. Serve Thai Oyster Sauce Chicken Stir Fry with cooked rice and scatter with the coriander leaves, and serve with a wedge of lime.

Tips For Chicken in Oyster Sauce

  • Good prep is the key to executing a stir-fry dish because everything cooks quickly over high heat. Have all of your ingredients at the ready when it’s time to cook and your dish will taste fresher and more vibrant as a result.
  • Try not to add too many things to the wok all at once. If you do, it will cool down your wok and your food will simmer or steam rather than fry. One of the trick to stir-frying is to cook the ingredients in batches.
