  • Coat the chicken in the oyster sauce, sweet soya sauce, dark soy sauce and sesame oil and set aside for 10 minutes. Heat a wok over high heat and add the vegetable oil.   • Add the mushrooms, onion and carrot and toss for a minute or two until the vegetables are softened, then add the chilli and spring onion and toss together. Add a little water if the mixture looks too dry, then thicken with as much of the cornflour mixture as is necessary to give the sauce a silky consistency.
