Garden Stuffed Baked Potatoes also called Twice-baked or put-back potatoes are simple, delicious, and inexpensive. This recipe gives the usually loaded spud a twist with frozen broccoli and ranch in the filling instead of bacon and Cheddar.

Baked Stuffed Potato Recipes

Ingredients

  • 4 large potatoes
  • 2 tablespoons butter
  • 1 small onion, chopped
  • 1 package chopped frozen broccoli
  • ½ cup salad dressing
  • 1 tablespoon vegetable oil
  • 2 teaspoons dried parsley
  • salt and pepper to taste

Directions:

  • Preheat oven to 425 degrees F . Pierce the skin of the potatoes with a fork.
  • Microwave pierced potatoes on high for 12 minutes. Place partially baked potatoes in the preheated oven and bake for 15 minutes. Slice off potato tops. Then scoop out the bulk of the interior of the potato being careful to leave the potato skins intact. In a medium bowl, mash the removed potato interior.
  • Heat a small skillet over medium heat, stir in butter. Saute onions in the skillet until tender, about 5 minutes.
  • Combine onions, broccoli, and ranch dressing with the mashed potato. Brush the outside of the potato skins with oil. Spoon potato mixture into the skins. Arrange stuffed potatoes on a cookie sheet.
  • Bake potatoes for 15 minutes in the preheated 425 degrees F (220 degrees C) oven, or until heated through. Season with salt, pepper, and parsley.

For salad dressing, use a mixture or emulsion of salad oil and vinegar, flavored it with herbs, spices, salt, pepper, sugar.

Do Baked Potatoes Cook Faster With Or Without Foil?

Some say wrapping baked potatoes in aluminum foil helps them cook faster and it does keep them hot for longer once they come out of the oven. Wrapping potatoes will also give you a softer, steamed skin, if that’s what you like.

Should I Oil Baked Potatoes?

Adding oil to potatoes before baking is perfectly fine, just a personal preference. Without oil the Idaho russet skin bakes up crispy, with oil the skin will carry a lot of the flavor of the oil so some people have a preference for using olive oil or peanut oil.

Why Are My Potatoes Still Hard In The Oven?

Hard potatoes usually result when the cooking temperature is not high enough to soften the starch in a potato. If they were still firm enough to grate, they were likely not fully cooked.
