I have been making this quick and healthy recipe of crunchy Asian pasta salad for years now. It is one of my favorite non-traditional pasta salads. And it always turned out to be delicious.

Ingredients

  • 1 box (7.75 oz) classic pasta salad mix
  • 1 package (3 oz) Oriental-flavor ramen noodle soup mix
  • 3 tablespoons sugar
  • 3 tablespoons vegetable oil
  • 2 tablespoons white vinegar
  • 2 tablespoons water
  • 1 tablespoon soy sauce
  • 3 cups coleslaw mix (shredded cabbage and carrots)
  • 1 cup fresh snow pea pods, strings removed. Cut them diagonally into ½-inch pieces
  • ½ cup sliced almonds, toasted
  • 1 can mandarin orange segments, drained

Directions

  • Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered for 12 minutes, stirring occasionally.
  • Drain pasta; rinse with cold water. Shake to drain well.
    In a large bowl, stir together seasoning mixes from pasta mix and soup mix, sugar, oil, vinegar, water, and soy sauce. Then add pasta, coleslaw mix, pea pods, almonds, and oranges; toss to combine.
  • Just before serving, coarsely crush dry noodles from soup mix; then stir into pasta mixture. Serve immediately, or refrigerate.

Tips For Crunchy Asian Pasta Salad

  • To toast almonds, sprinkle in an ungreased heavy skillet. Cook over medium heat for 5 to 7 minutes. Then stirring frequently until almonds begin to brown, then stirring constantly until they are light brown.
  • This salad is delicious served with grilled chicken, sandwiches, and burgers.

Classic Sandwich Recipe Served With Crunchy Pasta Salad

If you want to try this quick and healthy recipe of Crunchy Pasta Salad with a club sandwich. Here is the super easy recipe for a club sandwich.

Ingredients

  • 1/2 pound boneless chicken
  • 2 large Tomatoes Cut into slices
  • 12 slices Pickles or as desired
  • 9 slices Bread Toasted
  • 3 Tbsp Mayonnaise
  • 3 Tbsp Ketchup
  • 1 Bunch Lettuce leaves
  • 1 tbsp Lemon Juice
  • Salt and Pepper to taste. To taste

Direction

  • If using fresh Chicken (If not skip to the next instruction) – Place chicken breasts into a saucepan, season with Salt and Pepper (or as desired), and pour enough water to cover it. Place over medium heat and bring to a boil. Cook until the chicken meat is tender.
  • Transfer the chicken to a wide plate. If hot, allow it to cool, and shred the chicken meat with two forks.
  • Transfer the chicken to a deep bowl, add the Mayonnaise, Ketchup, lemon juice, salt, and black pepper to taste. Mix until everything is well blended and set aside.
  • Meanwhile, toast 9 slices of bread. Then, lay a slice of toast on a plate, or a board add a thick layer of the chicken mixture on it, and cover it up with another layer of toast. Top this layer with about two Lettuce leaves, Pickles, and Tomato slices, and cover it up with the third slice of toast.
  • Divide the arranged sandwich diagonally into halves or quarters and pin with a toothpick or a skewer all the way to the bottom to keep it in place. Enjoy!
